Red, White & Blue Salad

Ingredients:

  • 4 cups mixed greens
  • 2 green onions, thinly sliced
  • ½ cup each raspberries, blueberries
  • 2 pears, peeled, cored, sliced
  • 2 tablespoons orange juice
  • ½ cup chopped celery
  • ¼ cup bleu cheese crumbles
  • ½ cup balsamic vinegar, reduced by half

Directions

In large bowl, combine greens, onions and celery. Toss pears in orange juice.
Remove pears from juice and place on salad. Top with bleu cheese. Combine orange juice and vinegar, stir well. Drizzle over salad and serve immediately.
