Cool Indiana Salsa
Makes 25 servings

Ingredients:

  • 1 14.5 ounce can RED GOLD® PETITE DICED TOMATOES, drained
  • 1 cup ½” diced pineapple
  • 2 tablespoons chopped fresh cilantro
  • 3 garlic cloves, minced
  • ¼ cup minced onion
  • 1 jalapeno pepper, seeded and minced
  • ¼ cup diced red bell pepper
  • Salt and black pepper to taste
  • 1½ tablespoons fresh lime juice
  • ½ teaspoon chili powder

Directions:
In a large mixing bowl, combine all the ingredients; stir to blend.

Place 2 cups of salsa mixture in a blender and puree, leaving visible pieces. Add
back to salsa and combine.

Cover and refrigerate for at least one hour prior to serving so all the flavors will
blend. Enjoy!
